It’s always fun (and a bit surprising) to meet other east asian food enthusiasts. Tobias Gerdin and Tomoko Ogawa were here a few days ago to see my koji making set up. We spent hours talking about everything from growing japanese pumpkins, to soba, to chickpea miso as well as tasting, smelling and feeling. 

Tobias is an excellent soba noodle maker using swedish grown buckwheat. Super good! But he also wants to start making miso and koji.
