I’d like to know if you have any tips for me who feels like the koji isn’t really penetrating my pearl barley. What, to you, is a successful koji growth (specifically on barley?).
It’s hard to say. There are so many factors to account for. The main thing is that the pearling must be well done so the mold can get in.
